Ingredients

  • Pinto beans
  • Kidney beans
  • Black-eyed peas
  • Cannellini beans
  • Cucumber
  • Red onion
  • Sun-dried tomatoes
  • Extra virgin olive oil
  • Red wine vinegar
  • Fresh herbs (parsley, mint, basil)

Instructions

  1. Rinse and drain all canned beans; add to a mixing bowl.
  2. Chop cucumber, red onion, and sun-dried tomatoes; mix with the beans.
  3. In a separate bowl, whisk together olive oil, red wine vinegar, lemon zest and juice, garlic, dijon mustard, maple syrup, herbs, salt, and pepper.
  4. Pour dressing over the salad mixture; toss until well combined.
  5. Refrigerate for at least one hour before serving to enhance flavors.
