  • 4 chicken thighs (bone-in and skin-on)
  • 1 cup long-grain rice (basmati or jasmine)
  • 1 medium onion (finely chopped)
  • 3 cloves garlic (minced)
  • 2 cups chicken broth
  • 1 can diced tomatoes (14 oz, drained)
  • 1 cup carrots (diced)
  • 1/2 cup dried apricots (chopped)
  • 1/4 cup almonds (slivered)
  • 2 tablespoons olive oil
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Season chicken thighs with salt, pepper, and half of the spices.
  2. In a large pot over medium heat, heat olive oil until shimmering.
  3. Brown the seasoned chicken thighs for about 5-6 minutes on each side; remove from pot.
  4. Sauté chopped onion for 3-4 minutes until translucent; add minced garlic for 1 minute.
  5. Stir in diced carrots with remaining spices; cook for 2-3 minutes.
  6. Add rice, drained tomatoes, and dried apricots; stir well.
  7. Pour in chicken broth and bring to a gentle boil.
  8. Place browned chicken on top without stirring.
  9. Cover pot and reduce heat; simmer for about 30-35 minutes until rice is tender.
  10. Add slivered almonds five minutes before finishing cooking.
  11. Fluff rice gently with a fork before serving.
