  • 7 oz oil-packed sun-dried tomatoes
  • 4 oz capers
  • 1 cup thinly sliced red onion
  • 1/2 cup rough chopped fresh dill
  • 1/2 cup extra-virgin olive oil
  • 1/2 cup red apple vinegar
  • 2 cloves garlic, minced or crushed
  • 2 tsp dry mustard
  • 2 tsp dried thyme
  • 2 tsp dried oregano
  • 1 tsp kosher salt
  • 1 tsp ground black pepper
  • 1/2 cup crumbled feta cheese

Instructions

  1. Boil the potatoes in salted water until fork-tender (about 15 minutes). Drain and let cool before cutting into bite-sized pieces.
  2. Whisk together olive oil, vinegar, garlic, mustard, thyme, oregano, salt, and pepper in a mixing bowl.
  3. In a large bowl, combine the cooled potatoes with olives, sun-dried tomatoes, capers (drained), red onion slices, and dill. Pour the dressing over and toss gently to coat.
