  • 1 cup boiling water
  • 1 tsp baking soda
  • 1/2 cup unsalted butter, softened
  • 3/4 cup light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • Zest of 2 oranges
  • 1/2 cup fresh orange juice
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp ground cardamom
  • 1/4 tsp salt
  • 1/4 cup honey
  • 1 tbsp fresh orange juice

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare an 8-inch cake tin.
  2. In a bowl, whisk together flour, baking powder, cardamom, and salt; set aside.
  3. Cream together butter and brown sugar until fluffy. Add eggs, vanilla extract, orange zest, and juice; mix well.
  4. Fold in chopped dates.
  5. Gradually incorporate dry ingredients into the wet mixture until just combined.
