  • 2 tbsp coconut oil
  • 1 small yellow onion (diced)
  • 3 cloves garlic (minced)
  • 1 thumb-sized piece ginger (peeled and grated)
  • 1 cup shredded carrots
  • 1 green cabbage (sliced into strips)
  • 6 cups chicken broth
  • 2 tbsp coconut aminos
  • 1 tbsp rice vinegar (or lime juice for AIP)
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, brown the ground beef or chicken seasoned with salt and pepper. Once cooked, set it aside.
  2. In the same pot, melt coconut oil and sauté diced onion, minced garlic, and grated ginger for about 4 minutes until softened.
  3. Add shredded carrots and cook for an additional few minutes before incorporating sliced cabbage. Stir until the cabbage begins to soften.
  4. Pour in chicken broth and add the browned meat along with coconut aminos. Bring to a boil, then reduce heat and simmer for 20-25 minutes until the cabbage is tender.
  5. Stir in rice vinegar before serving, adjusting seasoning as needed.
