  • 1 lb ground beef
  • 1 small yellow onion (diced)
  • 2 medium carrots (diced)
  • 3 ribs celery (diced)
  • 2 cloves garlic (minced)
  • 29 oz diced tomatoes (with liquid)
  • 15 oz dark red kidney beans (drained and rinsed)
  • 15 oz cannellini beans (drained and rinsed)
  • 15 oz tomato sauce
  • 1 cup beef broth
  • 8 oz Ditalini pasta
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp sugar

Instructions

  1. Brown the ground beef in a Dutch oven over medium heat for about 7 minutes until fully cooked. Drain excess grease.
  2. Add diced onion, carrots, and celery; stir occasionally for 10 minutes. Add minced garlic and sauté for an additional 1-2 minutes.
  3. Mix in diced tomatoes, both types of beans, tomato sauce, and beef broth. Simmer for 20 minutes to meld flavors.
  4. Cook Ditalini pasta separately according to package instructions; drain well.
  5. Just before serving, add the cooked pasta to the soup and top with fresh herbs like basil.
