  • unbaked pie crust
  • 10 ounces peanut butter chips
  • 1 (14-ounce) can sweetened condensed milk
  • 3 tablespoons salted butter
  • 2 cups miniature vegan marshmallows
  • 1 1/2 cups dry roasted unsalted peanuts
  • 1/2 cup granulated sugar
  • 3 tablespoons salted butter (cubed)
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon kosher salt

Instructions

  1. Preheat your oven to 400°F. Roll out the pie crust to fit a 9-inch pie plate. Crimp the edges and prick the bottom with a fork.
  2. Line the crust with parchment paper and fill it with weights. Bake for 15 minutes, remove weights and parchment, then bake for another 15 minutes until golden brown. Let cool.
  3. In a saucepan over medium heat, melt peanut butter chips, sweetened condensed milk, and butter until smooth. Stir in vegan marshmallows until melted.
  4. Pour filling into the cooled pie crust and sprinkle peanuts on top.
  5. For caramel topping: Cook sugar in a saucepan until amber; stir in butter and cream carefully. Add vanilla and salt after removing from heat.
  6. Drizzle caramel over the peanuts on the pie and let set.
  7. Refrigerate for at least 4 hours before serving.
