  • 1/2 cup butter (1 stick)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar (packed)
  • 1 cup creamy peanut butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 & 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1/2 cup seedless jam

Instructions

  1. Preheat your oven to 350°F and line two baking sheets with parchment paper.
  2. In a bowl, cream together the butter, granulated sugar, and brown sugar until fluffy.
  3. Mix in the peanut butter until well combined.
  4. Add the egg and vanilla extract; mix until smooth.
  5. Gradually stir in the flour, baking soda, and salt until just combined.
  6. Scoop out dough balls (about 1 & 1/2 inches wide) onto the prepared sheets.
  7. Flatten each ball slightly using a fork to create a crisscross pattern.
  8. Top each cookie with about one teaspoon of seedless jam.
  9. Bake for 13–15 minutes or until edges are lightly browned.
  10. Allow cookies to cool on the pan for 5–10 minutes before transferring them to a wire rack.
