  • 1 lb ground chicken or turkey
  • 4 tablespoons soy sauce
  • 3 tablespoons oyster sauce
  • 12 leaves of lettuce (Boston or iceberg)
  • 1/2 cup chopped peanuts
  • Fresh ginger and garlic
  • 3 tablespoons water
  • 1 tablespoon sambal oelek (chili paste)
  • 1 tablespoon honey
  • juice of 2 limes
  • 2 garlic cloves, minced
  • 4 green onions, minced
  • 1 tablespoon rice vinegar (optional)
  • 1 teaspoon cornstarch (optional)
  • 2 tablespoons sesame oil
  • 6 ounces rice noodles

Instructions

  1. Whisk together the sauce ingredients: soy sauce, oyster sauce, water, sambal oelek, honey, ginger paste, lime juice, minced garlic, green onions, rice vinegar (optional), and cornstarch (optional).
  2. Marinate the ground chicken and chopped peanuts in about 3/4 of the sauce for 15 minutes.
  3. Soak rice noodles in water until softened; drain and rinse.
  4. Heat sesame oil in a skillet over medium heat. Cook the marinated chicken mixture for about 10 minutes until fully cooked.
  5. Stir in rice noodles and sauté for another 5 minutes.
  6. Assemble by placing generous amounts of the filling onto each lettuce leaf and topping with cilantro and additional peanuts.
