  • 1 lb. Red Kidney Beans (or 1 can)
  • 1 lb. Cannellini Beans (or 1 can)
  • 1 lb. Ditalini Pasta (or any small cut pasta)
  • 1 qt. Tomato Juice
  • 3 Carrots, sliced
  • 3 Celery stalks, diced
  • 1 Onion, diced
  • 46 cloves Garlic, minced
  • 8 cups Chicken Stock
  • Seasonings: Salt, Pepper, Thyme, Basil, Oregano

Instructions

  1. In a large heavy pot over medium-high heat, add oil and sauté the onion until soft.
  2. Add carrots and celery; cook until tender.
  3. Stir in garlic and seasonings; cook until fragrant.
  4. Pour in tomato juice and chicken stock; bring to a boil.
  5. Add soaked beans and simmer for 45–60 minutes until tender.
  6. Stir in pasta; cook for an additional 10–12 minutes until al dente.
  7. Taste and adjust seasoning as needed before serving warm.
