  • 3 red bell peppers
  • 1 jalapeño pepper
  • 3 garlic cloves
  • 1 red onion
  • 4 tablespoons olive oil
  • 4 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 3 tablespoons smoked paprika
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • 2 lbs chicken thighs
  • ½ cup chicken stock

Instructions

  1. In a mixing bowl, blend together sliced red bell peppers, jalapeño, garlic, red onion, olive oil, lemon juice, lemon zest, smoked paprika, oregano, thyme, salt, and pepper until smooth. Reserve half for later.
  2. Marinate the chicken thighs in the remaining mixture for at least 30 minutes in the refrigerator.
  3. Preheat grill or oven to medium-high heat. Cook chicken on grill skin-side down for 10-12 minutes per side or bake at 400°F for about 25 minutes until fully cooked.
  4. Optionally simmer reserved marinade with chicken stock in a saucepan to create a sauce.
  5. Let the chicken rest before serving. Drizzle with sauce and garnish with fresh parsley.
