  • 6 cups vegetable broth
  • 1 cup lentils, rinsed

  • 1 cup cooked navy beans
  • 1 cup cooked kidney beans
  • ½ pound Persian noodles or linguine
  • 3 cups chopped spinach
  • 1 cup chopped cilantro
  • 1 cup chopped parsley
  • 1 cup chopped dill

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté diced onion until soft.
  2. Add minced garlic and turmeric; cook until fragrant.
  3. Pour in vegetable broth and add lentils, chickpeas, navy beans, and kidney beans. Bring to a boil; reduce heat and simmer for 20 minutes.
