  • 1 pint cherry tomatoes (halved)

  • 1/2 cup diced red onion
  • 1 cup fresh mozzarella balls
  • 1/2 cup sliced olives
  • 1 can (15 oz) chickpeas or white beans (rinsed and drained)
  • Salt and pepper (to taste)
  • 7 oz basil pesto
  • 3 tablespoons olive oil
  • 1 tablespoon red apple vinegar

Instructions

  1. In a large bowl, combine cooked pasta, cherry tomatoes, spinach, onion, mozzarella, olives, and beans. Toss gently.
