  • 1 package Golden Oreos
  • 2 tablespoons powdered sugar
  • 1 block cream cheese (8 oz), softened
  • 2 tablespoons coconut vanilla extract (alcohol-free, optional)
  • 1/2 cup crushed pineapple (well drained)
  • 1 cup shredded coconut
  • 36 stemless maraschino cherries
  • 2 packages Ghirardelli White Melting Wafers (10 oz each)
  • toasted unsweetened shredded coconut (for topping)

Instructions

  1. Line a baking sheet with wax or parchment paper.
  2. Crush the Golden Oreos in a food processor until fine crumbs form.
  3. Add softened cream cheese and blend until combined.
  4. Fold in well-drained crushed pineapple and shredded coconut.
  5. Chill mixture for about 20 minutes to firm up.
  6. Scoop out tablespoon-sized portions; place a cherry in each and roll into balls.
  7. Freeze truffles for another 20 minutes while melting the white chocolate wafers.
  8. Dip each truffle into melted chocolate, then sprinkle with toasted coconut.
  9. Allow to set before serving or refrigerating.
