  • 1 lb cubed chicken breast
  • 1 cup pineapple chunks (fresh or canned)
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 onion (chopped)
  • 1 red bell pepper (diced)
  • 1 tbsp olive oil
  • 1 tbsp soy sauce
  • 1 tsp grated ginger
  • Salt and pepper to taste
  • ¼ cup green onions (sliced)
  • 1 tbsp sesame seeds

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add cubed chicken and cook until golden brown, about 6-8 minutes. Remove chicken and set aside.
  2. In the same skillet, sauté chopped onion, minced garlic, and diced red bell pepper until softened (about 5 minutes).
  3. Stir in pineapple chunks; cook for an additional 2 minutes. Then add jasmine rice, chicken broth, soy sauce, grated ginger, salt, and pepper.
  4. Bring to a boil then reduce heat to low. Cover tightly and let it simmer for 18-20 minutes until the rice absorbs all liquid.
  5. Return the cooked chicken to the skillet; mix well and heat through for another 1-2 minutes before serving.
  6. Garnish with sliced green onions and sesame seeds.
