  • 1 box (3.4 oz) instant pistachio pudding
  • 4 eggs
  • 1/4 cup vegetable oil
  • 2 tbsp water
  • 1 cup sour cream
  • 3/4 cup halved maraschino cherries
  • For the glaze: 2 cups powdered sugar
  • 22.5 tbsp milk
  • 1 tsp almond extract

Instructions

  1. Preheat your oven to 350°F and grease two small loaf pans.
  2. In a large mixing bowl, combine the cake mix and pistachio pudding. Add eggs, oil, water, and sour cream; mix until smooth.
  3. Gently fold in halved cherries and pour the batter into the prepared loaf pans.
  4. Bake for 35-40 minutes or until a toothpick inserted comes out clean.
  5. Allow to cool on a wire rack before drizzling with almond glaze made from whisking powdered sugar, milk, and almond extract together.
