  • 1 cup all-purpose flour
  • 2 Tbsp granulated sugar
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • 1/8 tsp ginger
  • 1/8 tsp nutmeg
  • 1 1/2 cups whole milk
  • 1/2 cup pumpkin puree
  • 3 large eggs
  • 3 Tbsp unsalted butter (melted)
  • 1 tsp vanilla extract
  • 8 oz cream cheese (softened)
  • 1/2 cup confectioners' sugar
  • 3 Tbsp maple syrup

Instructions

  1. In a blender, combine flour, sugar, salt, spices, milk, pumpkin puree, eggs, melted butter, and vanilla. Blend until smooth and let rest for at least 30 minutes.
  2. Heat a nonstick skillet over medium heat and lightly grease it with butter. Pour about 1/4 cup of batter into the pan and swirl to coat evenly.
  3. Cook for about 1 to 1½ minutes until edges are golden and lift easily; flip and cook for another minute.
  4. Repeat until all batter is used.
  5. For the filling, mix softened cream cheese with confectioners' sugar and maple syrup until smooth. Spread the mixture on each crepe before folding.
