  • 2 large eggs
  • 1½ cups whole milk
  • 2 tablespoons vegetable oil
  • Red food coloring
  • Blue food coloring

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  2. In another bowl, beat eggs with milk and vegetable oil until smooth.
  3. Combine wet ingredients into dry ingredients and mix gently until just combined; batter may be lumpy.
  4. Divide batter into three bowls; add red dye to one and blue dye to another. Mix until colors are blended.
  5. Let the batter rest for about 10 minutes to increase fluffiness.
  6. Preheat a greased griddle over medium heat (275ºF). Pour ¼ cup of each colored batter onto the griddle.
  7. Cook until bubbles form on top (about 2-3 minutes), then flip and cook for an additional minute.
  8. Serve warm topped with syrup and garnished with whipped cream or fresh berries.
