  • 1/2 cup unsalted roasted peanuts (75g)
  • 3 tbsp high-quality chili oil (45ml)
  • 2 cloves garlic, minced
  • 3 tbsp rice vinegar (45ml)
  • 1 tsp sugar (5g)

Instructions

  1. Wash and slice the cucumbers thinly. Sprinkle with salt and let sit for 5 minutes to draw out moisture.
  2. In a bowl, combine minced garlic, sugar, rice vinegar, and chili oil. Whisk until well mixed.
  3. Drain the cucumbers and pat them dry with paper towels. In a large mixing bowl, combine cucumbers and roasted peanuts.
  4. Pour the dressing over the cucumber-peanut mixture and toss gently to coat.
  5. Chill in the refrigerator for 15-30 minutes if desired before serving.
