  • 1 lb boneless, skinless chicken breasts or thighs
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/4 tsp garlic powder
  • Salt and pepper to taste
  • 1/2 cup diced red onion
  • 1/2 cup chopped fresh cilantro
  • 1 small jalapeño, seeded and finely chopped (optional)
  • 1 tbsp lime juice (for salsa)
  • Salt to taste (for salsa)
  • 1 cup fresh pineapple chunks
  • 8 small corn or whole wheat tortillas
  • 1 avocado, sliced or diced
  • Fresh lime wedges

Instructions

  1. In a mixing bowl, whisk together olive oil, lime juice, chili powder, smoked paprika, cumin, garlic powder, salt, and pepper until well combined.
  2. Add the chicken pieces to the marinade and coat well. Let sit for at least 15 minutes.
  3. Meanwhile, combine diced red onion, cilantro, jalapeño (if using), lime juice, and salt in a bowl to make the salsa.
  4. Heat a skillet over medium-high heat and cook the marinated chicken until golden brown and cooked through (165°F).
  5. Warm tortillas in a dry skillet until soft.
  6. Assemble tacos by layering chicken, pineapple chunks, salsa mix, and avocado on tortillas.
