  • 1 pound sweet cherry tomatoes
  • 3 tablespoons olive oil (divided)
  • 4 minced garlic cloves (divided)
  • Salt and black pepper to taste
  • 8 ounces ricotta cheese
  • 1 bunch fresh basil (divided)
  • 1 crusty bread loaf
  • Balsamic glaze for drizzling

Instructions

  1. Preheat your oven to 400ºF.
  2. In a small baking dish, combine cherry tomatoes, 1 tablespoon olive oil, 2 minced garlic cloves, salt, and pepper. Bake for 20 minutes until slightly burst; cool and set aside.
  3. In a blender, mix ricotta, remaining minced garlic, 1 tablespoon olive oil, half the basil, salt, and pepper until smooth; refrigerate.
  4. Slice the bread into 12 pieces. Brush with the remaining olive oil mixed with one minced garlic clove; season with salt and pepper. Toast in the oven for 10-12 minutes until golden.
  5. Assemble by spreading ricotta on each toast, topping with roasted tomatoes, fresh basil, and a drizzle of balsamic glaze.
