  • Salt and freshly ground black pepper
  • 1/4 cup honey
  • 3 tbsp soy sauce
  • 4 cloves garlic, minced
  • 8 cloves whole garlic

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Pat the lamb shoulder dry and season generously with salt and pepper.
  3. Mix honey, soy sauce, and minced garlic in a bowl.
  4. Place the seasoned lamb in a roasting pan, pour half of the glaze over it, and add whole garlic cloves around the meat.
  5. Roast for about 2 hours, basting with remaining glaze until internal temperature reaches at least 145°F (63°C).
