  • ½ tablespoon extra virgin olive oil
  • ½ teaspoon salt
  • 2 tablespoons extra virgin olive oil (for dressing)
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon orange juice (or lemon juice)
  • 2 teaspoons maple syrup (or honey)
  • 2 teaspoons mustard
  • ½ teaspoon salt (for dressing)
  • Black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and optionally line a baking sheet with parchment paper.
  2. Trim the stems of the Brussels sprouts, remove outer leaves, rinse, and pat dry. Halve them lengthwise.
  3. In a mixing bowl, toss the halved sprouts with ½ tablespoon olive oil, salt, and black pepper until evenly coated.
  4. Spread the Brussels sprouts in a single layer on the baking sheet and roast for 20-25 minutes until charred outside and tender inside.
  5. While roasting, prepare the dressing by combining olive oil, apple cider vinegar, orange juice, maple syrup, mustard, salt, and black pepper in a jar; shake well to combine.
  6. Once roasted, drizzle the Brussels sprouts with the dressing before serving.
