  • 1 whole chicken (about 45 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Zest and juice of 2 large oranges
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • 1 small onion, quartered
  • 1 cup chicken broth

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix olive oil, minced garlic, thyme, rosemary, orange zest and juice, honey, soy sauce, salt, and pepper.
  3. Place the chicken in a roasting pan and coat it with half of the marinade; marinate for at least 30 minutes.
  4. Add quartered onion around the chicken and pour in the chicken broth.
  5. Roast for about 1 hour and 15 minutes, basting every 20 minutes until golden brown.
  6. Use a meat thermometer to ensure it reaches an internal temperature of at least 165°F (75°C).
  7. Let it rest for about 10 minutes before carving.
