  • 1 whole or half bone-in turkey breast (or boneless)
  • ½ cup unsalted butter, softened
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 3 cloves garlic, minced
  • 1 ½ teaspoons fresh thyme, chopped
  • 1 ½ teaspoons fresh rosemary, chopped
  • ½ teaspoon fresh sage, chopped

Instructions

  1. Thaw the turkey in the refrigerator if frozen, allowing 24 hours for every 5 pounds.
  2. Remove from the fridge 20 minutes before cooking and preheat oven to 325°F (165°C).
  3. In a bowl, combine softened butter, garlic, salt, pepper, thyme, rosemary, and sage until smooth.
  4. Pat turkey breast dry and season lightly with additional salt and pepper.
  5. Loosen skin gently and spread herb butter underneath and on the surface of the turkey.
  6. Place in a roasting pan; roast for about 14–15 minutes per pound until internal temperature reaches 165°F (74°C).
  7. Let rest for at least 15 minutes before carving.
