  • 45 Bone-In Chicken Thighs
  • 2 tsp Onion Powder
  • 2 tsp Garlic Powder
  • 1 tsp Smoked Paprika
  • 1 tsp Fresh Thyme
  • 2 tbsps Fresh Rosemary, chopped
  • 1 Red Onion, sliced
  • 12 Honeycrisp Apples, sliced
  • 4 tbsps Salted Butter
  • 3/4 cup Apple Cider
  • 1/2 cup Chicken Broth or White Apple Vinegar
  • 2 tbsps Dijon Mustard
  • 3 cloves Garlic
  • Olive oil, for cooking
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Season bone-in chicken thighs with onion powder, garlic powder, smoked paprika, fresh thyme, and chopped rosemary.
  3. Heat olive oil in a cast iron skillet over medium-high heat. Sear chicken thighs skin-side down for about 5-7 minutes on each side until golden brown.
  4. Add sliced red onion and Honeycrisp apples around the chicken in the skillet.
  5. Transfer skillet to the oven and roast for 20-25 minutes until internal temperature reaches 165°F (75°C).
  6. Remove chicken and vegetables from the skillet, then make the sauce by whisking together salted butter, apple cider, chicken broth or white apple vinegar, Dijon mustard, and minced garlic on medium heat until thickened.
  7. Return chicken and apples to the skillet, spoon sauce over them, and serve hot.
