  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 4 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 2 cans (15 oz each) cannellini beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 sprig fresh rosemary
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups chopped spinach or kale
  • 1 tablespoon lemon juice

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion, carrots, and celery for 8–10 minutes until soft.
  2. Add minced garlic and tomato paste; cook for 1–2 minutes until fragrant.
  3. Stir in cannellini beans, vegetable broth, rosemary, thyme, bay leaf, salt, and pepper. Bring to a gentle boil.
  4. Reduce heat and simmer uncovered for 20–25 minutes.
  5. In the last few minutes of cooking, add chopped spinach or kale until wilted.
  6. Remove the bay leaf and stir in lemon juice before serving hot.
