  • 2 large chicken breasts
  • 1 can black beans (drained & rinsed)
  • 1 can corn (drained)
  • 1 can Ro-tel diced tomatoes & green chilies (drained)
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt & pepper (to taste)
  • 1 cup Mexican cheese blend
  • Fresh cilantro (chopped, optional, to taste)

Instructions

  1. Preheat the oven to 400F.
  2. Cut chicken breasts in half lengthwise and season both sides with garlic powder, chili powder, salt, and pepper.
  3. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken cutlets for about 3-4 minutes per side until golden, then remove from the pan.
  4. Sauté chopped onion in the same skillet until softened (about 5 minutes).
  5. Stir in drained Ro-tel tomatoes, black beans, corn, and smoked paprika; heat through for a couple of minutes.
  6. Return chicken to the skillet, spoon some mixture over each piece, and sprinkle generously with cheese.
  7. Bake for 5-7 minutes until chicken is cooked through (165F) and cheese is melted. Optionally broil for crispiness.
