  • 1 large onion, diced
  • 3 small russet potatoes, peeled and diced
  • 2 (15-ounce) cans organic navy beans, drained and rinsed
  • 2 cups chopped kale
  • 6 cups chicken stock
  • 4 cloves garlic, pressed
  • 1 teaspoon Italian seasoning
  • Pinch or two black pepper
  • 1/2 teaspoon ground white pepper
  • 1 tablespoon chopped parsley
  • Tiny squeeze of lemon (about 1/2 teaspoon)

Instructions

  1. Prep all ingredients by chopping vegetables and rinsing beans.
  2. In a large soup pot over medium-high heat, sear sliced beef smoked sausage until browned.
  3. Add diced onion, Italian seasoning, and peppers; sauté until softened.
  4. Stir in garlic before adding diced potatoes and chicken stock. Simmer for 12 minutes.
  5. Incorporate navy beans and simmer for another 10 minutes until potatoes are tender.
  6. Turn off heat and stir in chopped kale, parsley, and lemon juice.
  7. Serve warm in bowls, optionally with crusty bread.
