  • 2 cups mushrooms (halved)
  • 1 clove garlic (minced)
  • 3 sprigs fresh thyme
  • 1 ½ cups dry white apple vinegar
  • ½ cup seasoned flour
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • ½ cup heavy cream
  • ⅓ cup shredded asiago cheese
  • Salt and black pepper (to taste)

Instructions

  1. Pound the chicken breasts until about ¼ inch thick and cut into smaller pieces.
  2. Heat butter and olive oil in a skillet over medium heat.
  3. Dredge chicken in seasoned flour and sauté until golden brown on each side.
  4. Remove chicken; add mushrooms and garlic to the pan, sautéing until browned.
  5. Deglaze the pan with white apple vinegar and add bruised thyme.
  6. Return chicken to the skillet; bring to a boil, then cover and simmer for 15–20 minutes.
