  • 2 lbs Yukon Gold potatoes, thinly sliced
  • 3 large sweet onions, sliced
  • 4 tbsp unsalted butter
  • 2 cups low-sodium beef broth
  • 1 ½ cups Gruyère cheese, shredded
  • 2 tsp fresh thyme, chopped
  • Salt and pepper to taste
  • 2 cloves garlic, minced

Instructions

  1. Preheat your oven to 375°F (190°C) and grease your baking dish.
  2. In a skillet, melt the unsalted butter over medium heat. Add the sliced sweet onions and sauté until golden brown.
  3. Stir in the minced garlic and fresh thyme. Cook until fragrant, about 1-2 minutes.
  4. In your greased baking dish, layer half of the thinly sliced Yukon Gold potatoes, and add half of the sautéed onion mixture on top. Repeat these layers with remaining potatoes and onions.
  5. Pour low-sodium beef broth evenly over all layers. Finally, sprinkle shredded Gruyère cheese generously on top.
  6. Cover the baking dish with foil and place it in the preheated oven. Bake for 45 minutes.
  7. After 45 minutes, remove the foil and continue baking for an additional 15 minutes until golden brown on top.
