  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 1 zucchini (sliced)
  • 1 small red onion (sliced)
  • 1 cup cherry tomatoes
  • ½ cup Kalamata olives
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup crumbled feta cheese (optional)
  • Fresh parsley (optional garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine olive oil, lemon juice, minced garlic, and Greek seasoning.
  3. Add chicken to the marinade, ensuring it is well-coated. Let it marinate for about 10 minutes.
  4. Slice the vegetables and toss them in olive oil, oregano, salt, and pepper.
  5. Arrange marinated chicken on a baking sheet and surround it with seasoned vegetables.
  6. Roast in the oven for approximately 20 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
