  • 4 tablespoons unsalted butter, chilled
  • 1/2 cup buttermilk
  • 1 cup chopped fresh strawberries
  • 1 tablespoon granulated sugar
  • Pinch of salt
  • 1 teaspoon fresh lemon juice
  • 1/2 cup heavy whipping cream, very cold
  • 1 tablespoon powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 450°F (232°C) and line a quarter sheet baking pan with parchment paper.
  2. In a small bowl, whisk together flour, salt, baking soda, and baking powder.
  3. Cut chilled butter into the flour mixture until it resembles rice-sized pieces.
  4. Pour in buttermilk and knead slightly until combined; add more buttermilk if needed.
  5. Pat dough onto a floured surface until about an inch thick, then cut out biscuits.
  6. Bake biscuits for about 9–10 minutes until lightly golden.
  7. In another bowl, mix strawberries with sugar, salt, and lemon juice; set aside.
  8. Whip cold cream until soft peaks form; add powdered sugar and vanilla, then beat until fluffy.
  9. To serve, slice each biscuit in half, layer with whipped cream and strawberries.
