  • 1 bell pepper, finely chopped
  • 2 celery stalks, finely chopped

  • 2 eggs
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh basil, chopped
  • Salt and pepper, to taste
  • 1 cup tomato sauce
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, heat olive oil and sauté onion, bell pepper, and celery until soft. Add minced garlic for an additional minute.
  3. In a large mixing bowl, combine ground beef with sautéed vegetables, breadcrumbs, Parmesan cheese, eggs, herbs, salt, and pepper. Mix gently until just combined.
  4. Transfer the mixture into a greased loaf pan or shape on a baking sheet lined with parchment paper. Spread half of the tomato sauce on top.
  5. Bake for 1 hour or until the internal temperature reaches 160°F (71°C). Let it rest for 10–15 minutes before slicing.
