  • 1 ⅛ cups sugar
  • 2 cups all-purpose flour
  • 2 ½ tsp baking powder
  • ⅓ cup butter (softened)
  • ⅓ cup Greek yogurt (plain)
  • 1 large organic orange (washed, cut into pieces, seeds removed)
  • 2 ½ oz fresh orange juice
  • 1 tsp vanilla extract (optional)
  • 3 Tbsp sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Blend the chopped orange pieces until smooth in a blender or food processor, then pour into a mixing bowl.
  3. Add eggs, Greek yogurt, softened butter, and vanilla extract (if using) to the orange mixture; whisk until combined.
  4. In another bowl, sift together flour and baking powder, then gradually mix into the wet ingredients until just combined.
  5. Pour batter into a greased baking pan lined with parchment paper and bake for about 55 minutes or until a toothpick inserted comes out clean.
  6. Allow cooling in the pan for about 10 minutes before transferring to a wire rack to cool completely.
