  • 1 large onion, diced
  • 4 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons curry powder
  • 1 can (14 oz) full-fat coconut milk
  • 1 can (14 oz) crushed tomatoes
  • Salt and pepper, to taste

  1. Heat the coconut oil in a large skillet or Dutch oven over medium-high heat. Brown the beef cubes in batches for about 3-4 minutes per side until golden.
  2. Remove the beef and sauté diced onion for about 5 minutes until translucent. Add minced garlic and grated ginger; cook for another minute.
  3. Stir in curry powder and other spices; cook for about 2 minutes until aromatic.
  4. Return beef to the pot and add crushed tomatoes and coconut milk. Stir well.
  5. Bring to a gentle boil, then reduce heat to low. Cover and let simmer for at least 2-3 hours until the beef is tender.
