  • ½ cup crushed graham crackers
  • 1 cup mini vegan marshmallows (for filling)
  • ½ cup chocolate spread or melted chocolate
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Melt butter in a large saucepan over medium-low heat. Add mini vegan marshmallows, stirring until smooth.
  2. Remove from heat and fold in crispy rice cereal and crushed graham crackers until fully combined.
  3. Transfer the mixture onto greased parchment paper, pressing it into a ½-inch thick rectangle.
  4. Spread the chocolate layer evenly over the pressed mixture and sprinkle remaining mini vegan marshmallows on top.
  5. Using parchment paper as a guide, roll tightly from one long edge to form a log shape.
  6. Wrap the rolled log in parchment paper and refrigerate for 30–45 minutes until set.
  7. Melt chocolate chips with coconut oil in a microwave-safe bowl, then drizzle over the chilled log before slicing into rounds.
