  • 1 tablespoon ground cinnamon
  • 1 tablespoon brown sugar
  • 1 teaspoon unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon coarse black pepper
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 3 1/2 pounds bone-in chicken parts
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup (1 stick) butter, melted
  • 1 serrano chile, minced
  • 2 tablespoons minced white onion
  • 1 tablespoon fresh lime juice
  • pinch coarse black pepper
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. In a small bowl, mix chili powder, cinnamon, brown sugar, cocoa powder, salt, and pepper. Rub the spice mixture over all chicken pieces.
  2. Preheat your grill to medium heat for gas or indirect heat for charcoal. Grill chicken for about 30 minutes until cooked through.
  3. For the Lime Butter, mix melted butter with cilantro, serrano chile, onion, lime juice, and black pepper in another bowl. Drizzle over grilled chicken before serving.
