  • 16 ounces frozen spinach (defrosted, drained)
  • 1 tablespoon olive oil
  • 1 medium red onion (diced)
  • 5 garlic cloves (minced)
  • 2 teaspoons dried dill
  • ½ cup parsley leaves (finely chopped)
  • ¼ cup green onions (finely chopped)
  • 2 teaspoons lemon zest
  • ½ teaspoon black pepper
  • 1 ½ cups crumbled feta cheese
  • About 20 sheets phyllo pastry (defrosted)
  • 6 tablespoons unsalted butter (melted)

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté diced red onions until softened.
  2. Add minced garlic and dried dill; cook until caramelized. Remove from heat to cool.
  3. Squeeze excess water from defrosted spinach and add it to the skillet with the onion mixture.
  4. Stir in parsley, green onions, lemon zest, black pepper, and feta; mix well.
  5. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  6. Roll out phyllo sheets and cut into strips about 2½ to 3 inches wide.
  7. Brush one strip with melted butter; layer another strip on top and brush again.
  8. Place a tablespoon of filling at one end; fold into triangles while sealing edges.
  9. Arrange on the baking sheet; bake for 20-25 minutes until golden brown.
  10. Cool for ten minutes before serving.
