  • 12 hard-boiled eggs
  • 2 tbsp mayonnaise
  • 1 1/2 tbsp dill pickle relish
  • 2 tsp yellow mustard
  • 1 1/2 tsp Cajun seasoning
  • 23 dashes hot sauce
  • 1 1/2 cups flour
  • 2 large eggs (beaten)
  • 2 cups Panko breadcrumbs
  • 2 1/2 tsp gumbo file powder
  • Salt & pepper to taste

Instructions

  1. Carefully scoop out the yolks from the hard-boiled eggs into a mixing bowl and mash until smooth.
  2. Add mayonnaise, dill pickle relish, yellow mustard, Cajun seasoning, and hot sauce to the mashed yolks; mix until well combined.
  3. Set up a breading station with flour in one bowl, beaten eggs in another, and Panko breadcrumbs combined with gumbo file powder in a third bowl.
  4. Fill each egg white half generously with the yolk mixture. Dip in flour, then beaten eggs, and finally coat with Panko breadcrumbs.
  5. Place coated egg halves on a baking sheet and bake at 375°F (190°C) for about 15 minutes or until golden brown.
