  • 1/2 cup buttermilk
  • 1 large egg, beaten

  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon hot sauce
  • 1 tablespoon lemon juice
  • 1 teaspoon Creole seasoning
  • 1 teaspoon chopped fresh parsley

Instructions

  1. In a large bowl, mix together cornmeal, flour, baking powder, salt, black pepper, cayenne pepper, and smoked paprika until well blended.
  2. In another bowl, whisk together buttermilk, beaten egg, green onions, and parsley until fully mixed.
  3. Combine the wet ingredients with the dry ingredients gently; fold in chopped crawfish tails.
  4. Heat oil in a deep fryer or large skillet to 350°F (175°C).
  5. Drop spoonfuls of batter into the hot oil and fry for about 2-3 minutes until golden brown. Remove with a slotted spoon and drain on paper towels.
  6. For the dipping sauce, whisk together mayonnaise, Dijon mustard, hot sauce, lemon juice, Creole seasoning, and parsley until smooth.
