  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach (chopped)
  • 1/2 cup cream cheese (softened)
  • 1/4 cup dried cranberries (chopped)
  • 1/4 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • 2 cloves garlic (minced)
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Using a meat mallet, pound the chicken breasts to an even thickness of about 1/2 inch.
  3. In a mixing bowl, combine chopped spinach, cream cheese, dried cranberries, mozzarella cheese, minced garlic, salt, and black pepper. Mix until well combined.
  4. Lay chicken breasts flat and place a spoonful of the filling in each breast's center. Fold over the sides and secure with toothpicks.
