  • 12 lasagna noodles
  • 10 ounces frozen spinach (thawed)
  • 15 ounces ricotta cheese
  • 2 and ½ cups shredded mozzarella cheese
  • ⅔ cup shredded parmesan cheese
  • 1 large egg
  • 28-ounce can crushed tomatoes
  • 1 tablespoon olive oil
  • 1 medium onion (diced)
  • 3 garlic cloves (minced)
  • 3 teaspoons dried basil
  • 2 teaspoons dried oregano
  • 2 teaspoons dried parsley
  • salt and pepper (to taste)

Instructions

  1. Preheat your oven to 375°F.
  2. In a large saucepan, heat olive oil over medium heat and sauté diced onion until translucent. Add crushed tomatoes, minced garlic, dried basil, oregano, and parsley; let simmer for about 20 minutes.
  3. Cook lasagna noodles according to package directions; drain and cool.
  4. In a mixing bowl, combine thawed spinach, ricotta cheese, 1½ cups mozzarella cheese, parmesan cheese, and an egg; mix well.
  5. Spread about ¼ cup filling on each noodle and roll tightly.
  6. Pour some tomato sauce into the baking dish; place rolled noodles seam-side down; cover with remaining sauce and mozzarella.
  7. Bake for approximately 25 minutes until bubbly.
