  • olive oil
  • 1 lb purple cabbage
  • 1 large red pepper
  • 1 large poblano pepper
  • 1 red onion
  • ½ cup freshly squeezed orange juice
  • 1 (7oz) can chipotle peppers in adobo sauce
  • 2 tbsp honey
  • 12 corn tortillas

Instructions

  1. Preheat your oven to 425°F.
  2. Toss sliced vegetables (cabbage, peppers, onion) with olive oil and roast on sheet pans until caramelized (25-40 minutes).
