Ingredients

Scale
  • 2 cups frozen sliced strawberries
  • 4 oz cream cheese, softened
  • 1 cup plus 2 Tbsp heavy cream
  • 1 Tbsp cornstarch
  • 2 Tbsp brown sugar
  • 2 Tbsp granulated sugar
  • 1 Tbsp lemon juice
  • Croissants (store-bought or homemade)

Instructions

  1. In a small bowl, mix cornstarch and cold water until smooth. In a saucepan, combine strawberries, sugars, and lemon juice over medium heat. Stir in the cornstarch mixture and cook until thickened (about 5-7 minutes). Let cool.
  2. Beat softened cream cheese with icing sugar until smooth; set aside.
  3. In another bowl, whip the chilled heavy cream until soft peaks form. Gently fold it into the cream cheese mixture.
  4. Preheat the oven as per croissant instructions. Slice croissants lengthwise without cutting through entirely. Spread the cream cheese mixture followed by strawberry filling inside each croissant.
  5. Close gently and place on a baking sheet. Bake according to package instructions until golden brown.
