  • ⅔ cup granulated sugar

  • ¼ tsp salt
  • ½ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 tbsp flour (for tossing strawberries)
  • ⅓ cup all-purpose flour (for crumb topping)
  • 3 tbsp granulated sugar (for crumb topping)
  • 3 tbsp unsalted butter (for crumb topping)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a muffin tin.
  2. In one bowl, beat cream cheese, sugar, egg yolk, and vanilla until smooth; set aside.
  3. In another bowl, mix flour, sugar, baking powder, baking soda, and salt.
  4. In a separate bowl, whisk eggs, milk, oil, and vanilla until combined.
  5. Fold wet ingredients into dry ingredients until just mixed; add floured strawberries gently.
  6. Fill muffin cups halfway with batter; add cream cheese filling in the center before topping with more batter.
