  • 16 ounces cream cheese (softened)

  • 2 teaspoons lemon juice
  • 1 cup cold whipping cream
  • 3 tablespoons strawberry vegan gelatin

Instructions

  1. In a mixing bowl, combine melted butter, graham cracker crumbs, and sugar. Press firmly into the bottom of a 9×13 inch baking dish.
  2. Arrange sliced strawberries evenly over the crust.
  3. Beat softened cream cheese with an electric mixer until smooth. Gradually blend in powdered sugar, vanilla extract, and lemon juice.
  4. Whip cold cream until soft peaks form and fold gently into the cream cheese mixture.
  5. Spread the mixture over the strawberries in the baking dish.
  6. Prepare vegan gelatin according to package instructions and pour over the top layer.
  7. Chill for at least 2 hours before serving.
