1/2 cup sago pearls
2 lbs strawberries (washed and stems removed)
3/4 cup evaporated milk
3 tablespoons condensed milk (adjust to taste)
1 cup coconut milk (whole fat chilled)
Chopped strawberry pieces (for garnish)
Instructions
In a medium saucepan, boil water and add sago pearls. Cook until transparent (about 15 minutes), then remove from heat and let sit for an additional 10–15 minutes.
Strain cooked sago under cold water to stop cooking, then set aside in water to prevent drying.
Blend strawberries with evaporated milk and condensed milk until smooth; chill in the refrigerator.
Drain sago well, then combine with chilled coconut milk and strawberry mixture in a large bowl, mixing gently.
Serve in individual cups or bowls, garnished with fresh chopped strawberries.
