  • 4 cups strawberries
  • ½ cup water
  • ¾ cup granulated sugar (divided)
  • 4 tablespoons lemon juice
  • 1 ½ cups heavy cream
  • 16 oz mascarpone cheese
  • 260 g ladyfingers
  • Freeze-dried strawberries (for dusting)

Instructions

  1. Prepare the strawberry syrup by simmering strawberries with water, mashing, straining, and adding sugar and lemon juice until thickened. Cool.
  2. In a mixing bowl, combine mascarpone cheese with sugar and vanilla until smooth. Whip the heavy cream to stiff peaks and fold into the mascarpone mixture along with cooled strawberry syrup.
  3. Dip ladyfingers briefly in the syrup and layer them in a serving dish. Spread half of the mascarpone filling over the ladyfingers, add another layer of dipped ladyfingers, then top with remaining filling.
  4. Refrigerate for at least 6 hours before serving. Dust with freeze-dried strawberry powder and garnish with fresh strawberries before enjoying.
