  • 1 Egg yolk (room temperature)
  • 1/3 cup Christmas sprinkles (jimmies)
  • 1 1/2 cups All-purpose flour
  • 1/2 tsp Salt
  • 1/2 cup Unsalted butter (room temperature)
  • 1 cup White granulated sugar
  • 1 tsp Pure vanilla extract
  • 3 TBSP Milk
  • 1/2 cup Christmas sprinkles (jimmies)
  • 24 oz Cream cheese (room temperature)
  • 3/4 cup White granulated sugar
  • 1/2 cup Sour cream (room temperature or greek yogurt)
  • 1/4 cup Heavy cream (room temperature)
  • 1 tsp Pure vanilla extract
  • 4 Large eggs (room temperature)
  • 3/4 Cookie dough balls
  • 1 cup White chocolate chips
  • 1/3 cup Heavy cream

Instructions

  1. Prepare the Sugar Cookie Crust: Preheat oven to 325°F (163°C). In a mixing bowl, combine flour, baking soda, and salt. In another bowl, beat unsalted butter and sugar until fluffy; add vanilla extract and eggs. Gradually add dry ingredients and fold in sprinkles. Press mixture into a greased 9-inch springform pan.
  2. Make the Cookie Dough Filling: Mix flour and salt; cream together butter and sugar. Add vanilla and milk; fold in sprinkles to form small cookie dough balls.
  3. Prepare the Cheesecake Filling: Beat cream cheese until smooth, then gradually mix in sugar, sour cream, heavy cream, and vanilla extract. Add eggs one at a time on low speed.
  4. Assemble: Pour half of the cheesecake filling over the crust, add cookie dough balls, then top with remaining cheesecake filling.
  5. Bake: Bake for about 80 minutes until the center is set but slightly jiggly. Cool inside the oven with door ajar.
  6. Chill & Ganache: Refrigerate for at least four hours before serving. To make ganache, heat heavy cream and pour over white chocolate chips; stir until smooth.
